Mom's Chicken Gumbo Soup
A hearty and heart warming soup perfect for fighting off colds and flu.
About This Recipe
Mom's Chicken Gumbo Soup is a satisfying, comforting American classic that transforms simple ingredients into a deeply flavorful, hearty meal. This gluten-free and low-carb soup captures the essence of traditional comforting main dishes, combining a robust poultry base with a colorful array of aromatic vegetables. It is a wonderful choice for a cozy family dinner or a warming weekend lunch.
The success of this preparation relies on a patient, two-stage simmering process. Boiling a whole five-and-a-half-pound chicken directly in the stockpot with onions, garlic, celery, carrots, and herbs creates an incredibly rich, infused broth. Rather than relying on a heavy flour-based roux, this recipe achieves its signature body and texture by cooking brown rice directly in the tomato-infused broth and finishing the soup with frozen okra, which naturally thickens the liquid.
For the best results, let the boiled chicken cool for about thirty minutes before deboning to make the meat easy and safe to handle. If you prefer a thicker consistency, you can gently break up the whole canned tomatoes with your spoon while they simmer.
This recipe yields a generous ten servings, making it perfect for feeding a crowd or saving as leftovers, as the complex herbal flavors of thyme, marjoram, and bay leaf will continue to develop and deepen in the refrigerator. Serve each hot bowl with a final, optional sprinkle of gumbo filé at the table to add an authentic, earthy finish.
Ingredients
- 5.5 lb whole chicken
- 2 medium onions, diced
- 7 cloves garlic cloves, minced or crushed
- 6 stalks celery stalks, roughly diced
- 3 medium carrots, diced
- 2 leaf bay leaves
- 3 tsp thyme
- 2 tsp marjoram
- 1 32 oz container chicken broth
- 8 cups water
- 2 28 oz cans whole tomatoes
- 0.5 cup brown rice
- 2 lb frozen cut okra
- to taste salt
- to taste pepper
- to taste gumbo filé
Instructions
- 1
Place the first 10 ingredients in a 12-16 quart stockpot and bring to a boil over high heat. Once boiling lower heat to med/low and simmer for 2 hours or until chicken just begins to fall off the bone.
- 2
Using two hands, remove chicken with long handle tongs and a large serving spoon onto a plate to cool. Debone chicken once cool enough to handle, about 30 minutes. In the meantime rinse rice and add to stockpot along with tomatoes and juice from can. Simmer until rice is tender, approximately 40 minutes. Once rice is tender add deboned chicken and okra. Bring back to a slow boil and simmer for about 10 minutes or desired tenderness of okra. Salt and pepper to taste.
- 3
Once served, sprinkle on gumbo filé to taste. This is optional.
