Achieving the perfect consistency requires a gentle touch with the food processor. Pulse the chickpeas, aromatics, and fresh herbs just until they form a coarse, sandy paste. Over-processing will turn the mixture into a puree, resulting in a dense, heavy texture rather than a light and airy bite. Incorporating a touch of baking soda just before chilling helps lighten the mixture, while a thirty-minute rest in the refrigerator ensures the patties hold their shape beautifully during frying.

  • 1 tsp Ground coriander
  • 0.5 tsp Baking soda
  • 1 tbsp Sesame seeds
  • Neutral oil for frying
  • Salt
