  • 5 cloves Garlic, minced
  • 2 Carrot, chopped
  • 1 Scotch bonnet
  • 1 tbsp Fresh thyme
  • 1 tsp Ground allspice (pimento)
  • 1 tbsp Browning or dark soy
  • 1 can Canned butter beans, drained
  • 4 cups Beef stock
  • 2 tbsp Cooking oil
  • 1.5 tsp Salt
  • 1 tsp Black pepper

Instructions

    Season the oxtail with salt, black pepper, allspice, half the garlic, and thyme; marinate 30 minutes.
