About This Recipe
This traditional Colombian sancocho is a comforting, hearty soup that brings together tender chicken and a variety of starchy root vegetables in a deeply seasoned broth. It represents a classic style of Latin American comfort food, characterized by its rustic texture and satisfying, wholesome nature. This naturally gluten-free and dairy-free dish is perfect for a warming family dinner that feels both celebratory and deeply nourishing.
The success of this preparation lies in the staggered cooking method, which ensures each ingredient reaches its ideal texture without turning mushy. Simmering the bone-in chicken first with onions, garlic, scallions, and warm ground cumin creates a flavorful, savory foundation. Adding the firm green plantains and sweet corn rounds next, followed by the cassava and potatoes, allows the starches to partially break down and naturally thicken the broth into a rich, cohesive soup.
For the best results, ensure you skim any foam from the surface of the broth during the initial boil to keep the soup clean and clear. If you prefer a slight variation, you can adjust the level of cumin or add extra fresh herbs to suit your taste. Because the root vegetables continue to absorb liquid as they sit, you may want to add a splash of water when gently reheating any leftovers the next day.
To serve this robust soup in the traditional manner, ladle generous portions of the chicken, vegetables, and seasoned broth into deep bowls. Top each serving with a shower of freshly chopped cilantro. For a complete and authentic meal, accompany the bowls with sides of fluffy white rice, sliced avocado, and fresh lime wedges for squeezing over the top.
